Chocolate Mousse

Ingredients
  

  • 6 oz semi-sweet chocolate chips
  • 3 tbsp cold water
  • 2 tbsp sugar
  • 1 tsp vanilla
  • 5 eggs large, separated
  • whipped cream

Instructions
 

  • In top of double boiler over hot (not boiling) water, melt chocolate with water and sugar.
  • Stir until smooth, then blend in vanilla.
  • Cool slightly.
  • Beat in egg yolks one at a time until blended.
  • Beat egg whites until stiff but not dry.
  • Fold in carefully.
  • Pour into soufflĂ© cups or sherberts.
  • Cover and chill overnight or at least 8 hours.
  • Serve with a puff of whipped cream.
