Noodle Kugel

Ingredients
  

  • 3 eggs
  • 4 tbsp brown sugar
  • 4 cups broad noodles cooked
  • ½ cup raisins seedless
  • 1 tbsp lemon juice
  • 4 tbsp butter melted
  • 2 tbsp breadcrumbs
  • cinnamon
  • vanilla

Instructions
 

  • Pre-heat oven to 375℉.
  • Cook and drain noodles.
  • Beat eggs and brown sugar until fluffy.
  • Add noodles, raisins, lemon juice, melted butter, a dash of cinnamon, a drop of vanilla.
  • Turn into a well-greased ring mold or baking dish.
  • Sprinkle top with breadcrumbs.
  • Bake in oven 50 minutes or until browned. Check after 35 minutes. Cover with tin foil if needed.
Our first attempt at noodle kugel started here, with some tweaks. Our small convection oven browned the top quickly, so we covered with tin foil . Took out of oven at about 35-40 min.
