Chocolate Mousse
Ingredients
- 6 oz semi-sweet chocolate chips
- 3 tbsp cold water
- 2 tbsp sugar
- 1 tsp vanilla
- 5 eggs large, separated
- whipped cream
Instructions
- In top of double boiler over hot (not boiling) water, melt chocolate with water and sugar.
- Stir until smooth, then blend in vanilla.
- Cool slightly.
- Beat in egg yolks one at a time until blended.
- Beat egg whites until stiff but not dry.
- Fold in carefully.
- Pour into soufflé cups or sherberts.
- Cover and chill overnight or at least 8 hours.
- Serve with a puff of whipped cream.
