Guinness Brown Bread

Equipment

  • 1 1 lb. loaf pan

Ingredients
  

  • cup buttermilk
  • 1⅓ cup Guinness almost 1 draught can
  • 2 tbsp molasses
  • 2 tbsp Kerrygold salted butter melted
  • 2 cups whole wheat flour stone or course ground
  • cup wheat germ
  • ¾ cup rolled oats
  • 2 tbsp rolled oats additional
  • 2 tsp baking soda
  • 1 tsp salt

Instructions
 

  • Preheat oven to 350℉
  • Mix Guinness, buttermilk, and molasses in a bowl. Add ¾ cup rolled oats and let sit.
  • In a smaller bowl, put 2 tbsp of rolled oats in some of the leftover Guinness from the can and let sit.
  • In a larger bowl, mix flour, wheat germ, baking soda, and salt. Make a hole in the center.
  • Add melted butter to larger bowl of oats. Mix well so butter doesn't solidify.
  • Immediately start to mix into dry ingredients. Don't over mix. Put into loaf pan.
  • Take oats out of smaller bowl and spread across loaf top. Discard remaining Guinness.
  • Bake for 1 hour. Loaf is done when internal temperature is about 200℉.
  • Remove from loaf pan and wrap in damp tea towel. Let cool on wire rack.
